Matcha & Pistachio Tiramisu
There's no reason you need to serve the same old Yule log cake this year. Try switching things up this season and WOW your guests (or guest) with this Matcha Tiramisu.
Or should we say Matchamisu *wink
This treat is light as air, incredibly fresh, creamy and packed with protein.
Plus no one will fight over how big a piece they got ;)
THIS MATCHA TIRAMISU IS:

FOR THE MATCHA & PISTACHIO TIRAMISU
INGREDIENTS
For the vanilla Cream
-
1 block of extra-firm silky tofu of 349 g
-
½ cup coconut cream (the solid part of a refrigerated can of coconut milk)

¼ cup of maple syrup
-
The seeds of a vanilla bean or 1 teaspoon of vanilla extract

¼ tsp. salt
-
1 tsp. lemon zest
-
1 tablespoon lemon juice
-
2 tablespoons of melted coconut oil
INSTRUCTIONS

In a blender, puree all the ingredients for the vanilla cream except coconut oil into a smooth purée.

While blending at low speed, drizzle in the melted coconut oil. Blend until creamy.
For the assembly
-
1 tsp. matcha
-
1 tsp. maple syrup
-
1 tsp. amaretto (optional)
-
¼ cup of hot water
-
About ten tea cookies or vegan lady fingers, 3 slices of brioche bread, panettone or pound cake cut according to the size of the dish**
INSTRUCTIONS

In a small bowl, mix the Matcha, maple syrup, amaretto and hot water.

To assemble the tiramisu, cover the bottom of each glass with a cookie dipped in Matcha, then cover with vanilla cream. Repeat these two layers until the glass is filled, finishing with the vanilla cream.

Refrigerate for a minimum of 8 hours.
To garnish
-
¼ cup of pistachio flakes
-
1 tablespoon of sugar
-
1 tsp. of Matcha
INSTRUCTIONS

In a mortar or small food processor, reduce the pistachios, sugar and Matcha to a fine powder.

Garnish each tiramisu with pistachio powder.
Notes:
**To change the lady's fingers, traditionally used in tiramisu, it is possible to use sugar cookies, graham crackers, or better: slices of panettone, a traditional Italian brioche. The taste of citrus fruits goes perfectly with Matcha and pistachios!
