Matcha & Apple Bread
Warning: Baking this Matcha & Apple bread will make your whole house smell like fall (who needs expensive candles right?!)
It’s moist, fluffy, with a crunch of roasted almonds, embedded with soft chunks of apple, an aroma of fall spices and just enough matcha to keep you go-go going all day long!
Just sit back, relax, grab a cup of hot matcha, and enjoy this slice of heaven.

FOR THE CINNAMON SUGAR
INGREDIENTS

¼ cup of brown sugar
-
¼ cup of sliced almonds
-
1 teaspoon of cinnamon
FOR THE APPLES
INGREDIENTS

2 apples peeled and diced
-
1 teaspoon of lemon juice
FOR THE CAKE
-
½ cup of almond butter
-
½ cup of maple syrup
-
½ cup of applesauce
-
1 teaspoon of vanilla extract
-
1 ½ cups of all purpose or gluten free flour
-
1 ¾ teaspoons of baking powder
-
1 teaspoon of Teangle Matcha
-
½ teaspoon of salt
-
½ cup of plant-based milK
INSTRUCTIONS
For the Matcha & Apple bread:

Preheat oven to 350°F (177°C).

Grease a bread pan and line with parchment paper.

Mix all the ingredients to make the cinnamon sugar. Set aside.

In another bowl, mix the diced apples with the lemon juice.

In a large bowl, combine the almond butter, maple syrup, applesauce and vanilla extract. Whisk until the batter is smooth.

Add the dry ingredients and stir, adding the plant-based milk when the batter thickens and it becomes difficult to stir.

Pour half the cake batter at the bottom of the bread pan. Cover with half the diced apples and press lightly so the apples mix with the batter. Sprinkle with half of the cinnamon sugar. Repeat the same steps to create a second layer, cake, apples and cinnamon sugar.

Bake for 40-60 minutes or until cooked through. To test for doneness, insert a knife in the center of the cake. If it comes out clean, it’s done.

Allow the cake to completely cool before slicing.

Enjoy at breakfast, topped with almond butter, apple slices and a drizzle of maple syrup, for a snack or dessert!
